Life-Changing Bread
Ingredients
1 cup (135 g) of sunflower seeds
½ cup (90 g) of flax seeds
½ cup (65 g) of hazelnuts or almonds
1½ cups (145 g) of rolled oats
2 tbsp of chia seeds
4 tbsp of psyllium seed husks (3 tbsp if using psyllium husk powder)
1 tsp of fine grain sea salt
1 tbsp of maple syrup
3 tbsp of melted coconut oil or ghee
1½ cups of water
Method
Combine all the dry ingredients and mix well.
Mix maple syrup, oil and water together, then add this to the dry ingredients. Mix thoroughly until the dough becomes quite thick, but still able to be stirred.
Smooth out the mixture with the back of a spoon, and allow it to sit for a minimum of 2 hours, or overnight if you can.
Preheat oven to 175° C. Bake the bread in a loaf pan for 20 minutes. Then remove it from the loaf pan and bake for another 30 to 40 minutes, until it sounds hollow when tapped.
Let it cool completely before slicing. Enjoy!
