Carrot Cake
Ingredients
3 cups of blanched almond meal
½ tsp of sea salt
1 tsp of baking soda
¼ tsp of baking powder
1 tbsp of cinnamon
5 eggs
½ cup of honey
½ cup of coconut oil
3 cups of grated carrots
Method
Pre-heat oven to 180°.
In a small bowl combine almond meal, spices and other dry ingredients. Set aside.
In a separate bowl mix the eggs until creamy. Then add the honey and oil, blending until everything is nicely combined.
Combine wet and dry mixtures, and mix through.
Add the carrots and mix through.
Pour batter into 2 round pre-oiled cake pans.
Bake for 25 to 35 minutes, depending on your oven. A skewer will come out clean from the middle of the cakes when done.
Frost with cream cheese frosting (optional)
